Banana Nut Bread

I did my baking this evening. Since I was making two loaves, I used two mixers to save some time. Started by creaming together the sugar and the butter (two new sticks since Roscoe consumed the others.)


Add the eggs...


It's been a while since I last baked bread, so I'm rusty. At this point, the contents of the bowls didn't look the same. Confusing but carry on.


Here's my bananas I've been ripening. Honestly, I'd like them a little more ripe (rotten). Gives a better taste to the bread and seems to make it more moist.


Mix in the milk, baking soda, baking powder, vanilla extract, and nuts. The vanilla extract is some I made myself.


Turn and notice a big spider watching me. I guess he was watching me. I started watching him, and he ran away.


Time to add the flour...



Give it a good mixing...


And pour it up. I had extra batter, so I made an additional mini loaf.


An hour later, the mini loaf and one of the regular sized loaves were ready.


Then I got distracted because I had to chase after Roscoe out back in the dark because he was barking at something. Or nothing, as the case may be. Sigh... Last loaf got too brown, almost burnt, for my liking. These are gift loaves, but I won't be giving this one away.


I have enough bananas for two more loaves, so I'll bake those tomorrow night or Sunday. Maybe Roscoe will behave himself.

Did Roscoe fess up to consuming the original 2 sticks? My daughter may have visited you. When she was a toddler and could barely reach the counter or table, butter was NOT safe. Even unwrapped butter would go missing and the culprit with evidence was usually found under the table hiding while she ate the butter.
