One of my tomato plants is really producing, but between the heat and one feisty cardinal, the plant is struggling. It's a determinate variety, and I had hoped to make spaghetti sauce to put up when everything ripened. But Mr. Cardinal isn't gonna let everything ripen together. And let's face it, I'm not up to a big day of standing & cooking in the kitchen.
Instead, I Googled some salsa recipes--I've never made it--and found one that would use several items from my bucket garden. I had just enough ripe tomatoes for it, so that's what we did this morning.
Okay, I don't have a lime tree in my garden, but it might surprise you to know I do have a lemon tree. This lime came from Publix.
Instead of adding sugar, we substituted stevia grown in my garden that I dehydrated and ground.

We added color with some chopped green onion tops--yep, grown in my garden. Jamie seasoned, and it's
delicious! I'm so tickled and pleased!
Mr. Cardinal, on the other hand, is gonna be mad.
I can just picture that salsa adding some color to scrambled eggs or an omelet.
